flipping the pasta with 3/4 cup of shredded Asiago & Fontina cheeses."

Ingredients
• 1/3 cup olive
oil, divided
•
1/3 cup finely chopped red onion
•
3 cloves garlic, minced
•
1 (14 oz.) can stewed tomatoes
•
1 tsp. dried oregano
•
1 pinch dried thyme
•
2 (5 oz.) cans tuna, drained
•
1/3 cup white wine
•
1/2 lemon, juiced
•
1 (16 oz.) package angel hair pasta
•
1/3 cup grated Parmesan cheese
Direction
•
In a skillet, heat 1 tbsp. of oil over medium heat.
Add tomatoes, garlic, and onion to the skillet, then season with thyme and
oregano. Cook and stir for 5
minutes, till onion is softened. Stir in the remaining olive oil, lemon juice,
wine, and tuna. Keep cooking for 10 minutes while stirring sometimes.
• Set a big pot of
lightly salted water to a boil. Put in angel hair pasta. Cook for about 3 - 4 minutes, till al dente. Drain, then
transfer to a bowl.
• Mix the cooked
pasta with Parmesan cheese. Spread the skillet mixture over pasta to serve.
