Zing-a-ding-ding Spaghetti With Albacore Tuna









"A simple and easy recipe that I came up with. A fast fix for a flavorful and zingy dish. If you wish to put in a little more Italian cheesy flare, try flipping the pasta with 3/4 cup of shredded Asiago & Fontina cheeses."

Ingredients
   1/3 cup olive oil, divided
   1/3 cup finely chopped red onion
   3 cloves garlic, minced
   1 (14 oz.) can stewed tomatoes
   1 tsp. dried oregano
   1 pinch dried thyme
   2 (5 oz.) cans tuna, drained
   1/3 cup white wine
   1/2 lemon, juiced
   1 (16 oz.) package angel hair pasta
   1/3 cup grated Parmesan cheese

Direction

   In a skillet, heat 1 tbsp. of oil over medium heat. Add tomatoes, garlic, and onion to the skillet, then season with thyme and oregano. Cook and stir for 5 minutes, till onion is softened. Stir in the remaining olive oil, lemon juice, wine, and tuna. Keep cooking for 10 minutes while stirring sometimes.
   Set a big pot of lightly salted water to a boil. Put in angel hair pasta. Cook for about 3 - 4 minutes, till al dente. Drain, then transfer to a bowl.
   Mix the cooked pasta with Parmesan cheese. Spread the skillet mixture over pasta to serve.
