Ingredients
• 1 (16 oz.)
package spaghetti
•
3/4 cup olive oil,
divided
•
6 cloves garlic, minced
•
2 (4 oz.) cans sardines packed in olive oil, drained
•
1 cup seasoned bread crumbs
•
1/3 cup freshly grated Parmesan cheese
•
1/4 cup chopped fresh parsley
•
1 tsp. ground black
pepper
•
additional Parmesan cheese for serving (optional)
Direction

Boil a big pot of lightly-salted water. Put in
spaghetti, and cook for 8-10
minutes or till al dente. Drain off, and wash in the cold water. Toss along
with a quarter cup of the olive oil, keep covered and warm.

Add a quarter more cup of the olive oil into the
skillet, and heat on medium heat. Whisk in garlic, and cook for 2-3 minutes
till just golden. Put in sardines, and cook for 60 seconds longer. Whisk in a
third cup of the parmesan cheese and breadcrumbs. If needed to give mixture a
crumbly texture, whisk in the rest of a quarter cup of the olive oil. Whisk in
the pepper and parsley and take out
of the heat. If you want, serve along with the extra Parmesan cheese.
